🐟 Healthy Fish Pie with Prawns, Sea Bream, Salmon & Boiled Eggs

A comforting, protein-rich fish pie made with salmon, sea bream, prawns, vegetables and boiled eggs, finished with a creamy sauce and your choice of mashed potato, sweet potato or cauliflower.

Ingredients:

  • 400 g mixed fish, such as salmon, sea bream and prawns
  • 4 boiled eggs, sliced
  • 1 leek, finely sliced
  • 1 carrot, finely diced
  • 2 garlic cloves, minced
  • 300 ml milk
  • 1 tbsp olive oil
  • 2 tbsp whole-wheat flour
  • 2 tbsp butter
  • 1 tbsp fresh parsley, chopped
  • Zest of 1 lemon
  • Salt and black pepper, to taste
  • Mashed potato, mashed sweet potato or mashed cauliflower, enough to cover the top

Instructions:

  1. Preheat the oven to 200°C, or 180°C fan.
  2. Place the fish, apart from the prawns, into a pan with the milk and cook gently over medium heat for around 5–7 minutes, until the fish is just cooked. Remove the fish, allow it to cool slightly, then break it into large flakes. Keep the milk because you will use it to make the sauce.
  3. Heat the olive oil in a pan, add the leek, carrot and garlic, and cook gently until softened.
  4. In a separate pan, melt the butter. Add the whole-wheat flour and stir well to create a smooth paste. Gradually pour in the reserved milk, stirring continuously until the sauce becomes smooth and thick.
  5. Add the cooked fish and softened vegetables to a casserole or pie dish. Stir through the parsley and lemon zest, then season with salt and black pepper.
  6. Gently fold in the sliced boiled eggs and prawns. Pour over the white sauce and carefully combine everything so the pieces of fish and egg remain intact.
  7. Spread your chosen topping over the fish mixture. You can use traditional mashed potato, mashed sweet potato or mashed cauliflower.
  8. Cover the dish loosely with foil and bake for the first 25 minutes. Remove the foil and continue baking for another 10–15 minutes, until the top is hot and golden.
  9. Remove from the oven and leave the fish pie to rest for 5–10 minutes before serving.

Preparation: approximately 20 minutes
Cooking: approximately 40 minutes
Total: approximately 1 hour

Serves approximately 4–6 people

Serve with a fresh green salad, steamed green vegetables or a cucumber and tomato salad with olive oil and lemon.
