Broccoli and Egg Wraps with Smoked Salmon

These broccoli and smoked-salmon wraps are a nutrient-dense, protein-rich meal, combining eggs, smoked salmon and cottage cheese for plenty of protein. Broccoli and rocket provide fibre, vitamin C, folate and antioxidants, while avocado adds heart-friendly unsaturated fats and extra fibre. The result is a satisfying, lower-carbohydrate alternative to a traditional flour wrap, with plenty of flavour and useful nutrients in every serving.

Ingredients:

  • 200g broccoli florets
  • 2 large eggs
  • 1½ tablespoons oat flour, gram flour or ordinary flour
  • 20g finely grated mature Cheddar or Parmesan
  • ¼ teaspoon garlic powder
  • Black pepper
  • A very small pinch of salt
  • A little olive oil for the pan

The small amount of cheese helps bind the wrap and gives it flavour. You can leave it out, although the wrap may be slightly more delicate.
Makes two large wraps.

Instructions:

Broccoli wraps

  1. Steam or boil the broccoli for approximately 4–5 minutes, until tender but still bright green.
  2. Drain it extremely well. Allow it to cool, then squeeze out as much water as possible using kitchen paper or a clean tea towel.
  3. Chop the broccoli very finely or pulse it briefly in a food processor. Do not turn it into a wet purée.
  4. Beat the eggs in a bowl. Add the broccoli, flour, grated cheese, garlic powder and black pepper.
  5. Mix thoroughly and leave it for five minutes so the flour can absorb some moisture.
  6. Lightly oil a good non-stick frying pan and place it over medium-low heat.
  7. Spoon in half the mixture and spread it into a thin circle approximately 20cm across.
  8. Cook gently for 3–4 minutes, until firm underneath and nearly set on top.
  9. Carefully turn it using a wide spatula and cook for another 1–2 minutes.
  10. Repeat with the remaining mixture. Let the wraps cool slightly before filling—they become firmer as they cool.

Ingredients:

Smoked salmon filling

  • 100–120g smoked salmon
  • 3 tablespoons cottage cheese, light cream cheese or thick Greek yoghurt
  • A handful of baby spinach or rocket
  • ¼ cucumber, cut into thin strips
  • ½ avocado, sliced
  • A few strips of red pepper
  • Fresh dill or chives
  • A squeeze of lemon
  • Black pepper

Instructions:

Spread the cheese over each wrap, then add the spinach, cucumber, pepper, avocado and smoked salmon. Finish with dill, lemon and black pepper. Fold the bottom upwards and roll the sides around the filling.
Do not add much salt because smoked salmon and cheese are already salty.

My preferred combination would be smoked salmon, cottage cheese, cucumber, avocado, rocket, dill and lemon. It will taste fresh and luxurious while remaining nutritionally balanced.
