Chocolate Coconut Chia Breakfast Pudding

This is a creamy, filling breakfast rather than a sugary dessert. It provides protein, omega-3 ALA, fibre and healthy fats.

Ingredients:

Chia pudding

Chocolate topping

  • 100 g full-fat Greek yoghurt
  • 1 tablespoon unsweetened cocoa or cacao powder
  • 1–2 tablespoons milk
  • 1 teaspoon honey or maple syrup, optional
  • A little shredded coconut for decoration

Instructions:

  1. Add the chia seeds, milk, 200 g Greek yoghurt, Protein powder, Prebiotic fibers, shredded coconut, vanilla and sea salt to a bowl or container.
  2. Whisk thoroughly, ensuring that there are no lumps of protein powder or clusters of chia seeds.
  3. Leave the mixture for approximately 10 minutes and stir it again. This second stir is important because it prevents the chia seeds from settling at the bottom.
  4. Cover and refrigerate for at least four hours, although leaving it overnight will produce the best texture.
  5. To prepare the chocolate topping, mix 100 g Greek yoghurt with the cocoa powder. Add enough milk to create a smooth, pourable chocolate cream.
  6. Taste before adding honey or maple syrup because the protein powder may already make the pudding sweet enough.
  7. Divide the chia pudding between two glasses or breakfast bowls. Spoon the chocolate topping over each portion and finish with a small amount of shredded coconut.
