Creamy Overnight Oats with Warm Blueberry, Orange and Cardamom Compote

The warm blueberry compote served over cold, creamy overnight oats makes this breakfast feel special. It has the comfort of porridge but can be prepared in advance.

Ingredients:

Creamy overnight oats

The recipe works perfectly without protein powder  or prebiotic fiber. Add them only if you would like to increase the protein or prebiotic-fibre content.

Warm blueberry compote

  • 150 g fresh or frozen blueberries
  • 1 teaspoon chia seeds
  • 1 teaspoon honey or maple syrup, optional
  • ½ teaspoon finely grated orange zest
  • A small pinch of ground cardamom
  • 1 tablespoon water

Optional finishing toppings

  • 1 tablespoon chopped walnuts or pumpkin seeds
  • A spoonful of full-fat Greek yoghurt
  • A few fresh blueberries
  • A little extra cinnamon

Instructions:

  1. Place the oats, milk, Greek yoghurt, chia seeds, vanilla, cinnamon and sea salt in a bowl or container.
  2. If desired, add 20 g protein powder, ½ scoop prebiotic fibre, or both. These products are completely optional.
  3. Stir thoroughly until everything is evenly combined. If the mixture appears too thick, add a small splash of milk.
  4. Divide the mixture between two jars or breakfast bowls. Cover and refrigerate overnight, or for at least four hours.
  5. To prepare the compote, place the blueberries, water, orange zest and cardamom in a small saucepan.
  6. Cook gently for approximately five minutes, stirring occasionally. Press some of the blueberries with the back of a spoon while leaving others whole.
  7. Stir in one teaspoon of chia seeds and cook for another minute. Remove from the heat and allow the compote to thicken slightly.
  8. Taste before adding honey or maple syrup. Blueberries become naturally sweeter as they cook, so additional sweetener may not be necessary.
  9. In the morning, stir the overnight oats and add a splash of milk if you prefer a looser consistency.
  10. Warm the blueberry compote and spoon it over the cold, creamy oats. Finish with Greek yoghurt, walnuts, pumpkin seeds or fresh blueberries if desired.

The compote can be prepared in advance and kept in the refrigerator for approximately three days. Serve it warm or cold.

Why it is good for you

Oats provide soluble fibre, including beta-glucan, while chia seeds contribute additional fibre, magnesium and plant-based omega-3 ALA.

Full-fat Greek yoghurt provides protein and creates a naturally creamy texture. Protein powder is an optional way to increase the protein content, while prebiotic fiber is an optional source of additional prebiotic fibre.

Blueberries provide fibre and naturally occurring polyphenols. Gently warming them creates a jam-like compote without requiring large amounts of added sugar. Orange zest and cardamom give the compote a fresh and distinctive flavour.

  • Approximately 18–20 g protein
