High-Protein Cottage Cheese Cinnamon-Roll Mug Cake

This warm cinnamon-roll mug cake takes only a few minutes to prepare. Cottage cheese and egg white provide protein, while ground flaxseed and almond flour add fibre and healthy fats. It feels like dessert but is substantial enough for breakfast or an afternoon snack.

Ingredients:

For the mug cake

  • ½ cup cottage cheese, approximately 110 g
  • 1 egg white
  • 2 tablespoons almond flour
  • 1 tablespoon ground flaxseed
  • 1 tablespoon thick Greek yoghurt or milk
  • 2 teaspoons maple syrup or preferred sweetener
  • ½ teaspoon baking powder
  • ¼ teaspoon vanilla extract
  • Small pinch of salt

For the cinnamon swirl

  • 1 teaspoon maple syrup
  • ½ teaspoon ground cinnamon
  • ½ teaspoon melted butter, optional

For the creamy topping

  • 1 tablespoon thick Greek yoghurt
  • 1 teaspoon cream cheese
  • A few drops of maple syrup or a little powdered sweetener
  • Small pinch of cinnamon

Instructions:

  1. Lightly grease a large microwave-safe mug or small ramekin. Choose one with enough space for the cake to rise.
  2. Place the cottage cheese, egg white, Greek yoghurt or milk, maple syrup and vanilla into a small blender.
  3. Blend until completely smooth. Blending the cottage cheese is important because it gives the finished cake a creamy, even texture.
  4. Add the almond flour, ground flaxseed, baking powder and salt. Blend briefly until combined. Do not blend for longer than necessary.
  5. Pour the batter into the prepared mug. Microwave it promptly because the ground flaxseed will begin absorbing liquid and thickening the mixture.
  6. Mix the maple syrup, cinnamon and optional melted butter in a small bowl.
  7. Spoon the cinnamon mixture over the batter in a spiral. Use a toothpick or the tip of a knife to swirl it gently through the top. Do not mix it completely into the batter.
  8. Microwave on high for 60 seconds. Check the centre, then continue cooking in 10-second intervals until the top is just set. Depending on the microwave, the total cooking time will normally be between 70 and 90 seconds.
  9. Leave the mug cake to rest for one minute. It will continue setting as it stands.
  10. Mix the Greek yoghurt, cream cheese and sweetener until smooth. Spoon it over the warm cake and finish with a small pinch of cinnamon.

Tips:

  • Use ground flaxseed rather than whole seeds.
  • Do not replace one tablespoon of flaxseed with one tablespoon of chia seeds. Chia absorbs more liquid and may make the cake gummy.
  • Microwave the batter soon after mixing because flaxseed thickens as it sits.
  • Start with 60 seconds and add more time gradually. Overcooking will make the cake rubbery or dry.
  • The centre should be moist and soft but not liquid.
  • Allow it to rest for one minute before adding the topping.
  • Eat it warm for the best cinnamon-roll texture.

The cottage cheese and egg white make this a genuinely high-protein mug cake, providing approximately 22–24 g of protein. Protein helps maintain muscle mass, supports recovery and makes a meal or snack more satisfying. This becomes especially important after 40 and throughout perimenopause and menopause, when preserving muscle should be a priority.
Ground flaxseed provides fibre, plant-based omega-3 ALA and lignans. Fibre supports normal digestion, helps feed beneficial gut bacteria and can make the cake more filling. Ground flaxseed is preferable to whole seeds because the body can access more of its nutrients.
Almond flour provides vitamin E, magnesium, fibre and predominantly unsaturated fats. It also gives the cake a soft, moist texture without using refined white flour.
Cinnamon adds natural sweetness and warmth, allowing us to create a satisfying dessert with only a small amount of added sweetener.
Greek yoghurt and cottage cheese contribute calcium as well as protein. Calcium, sufficient protein and regular resistance exercise all play important roles in maintaining healthy bones and muscles as we get older.
This cake is not “healthy” because it removes every enjoyable ingredient. It is nutritious because it combines protein, fibre and healthy fats while still tasting like a comforting cinnamon-roll treat.

Using a low-calorie sweetener instead of maple syrup will place it toward the lower end of the calorie range.
