High-Protein Coconut & Dragon Fruit Jelly

A refreshing, naturally colourful dessert with protein, fibre, chia seeds, coconut and fresh fruit, while the optional prebiotic fibre makes it an easy way to add a little more fibre to your day.

Ingredients:

White Coconut Layer

  • 250 ml full-fat coconut milk
  • 25 g vanilla protein powder
  • 1½ tsp powdered gelatin
  • 1 tbsp chia seeds
  • 2 tbsp unsweetened shredded/desiccated coconut
  • 1 tbsp Zinzino ZinoBiotic or another prebiotic fibre powder, optional
  • 1–2 tsp agave syrup, optional

Pink Dragon Fruit Layer

  • 250 ml coconut water
  • 1½ tsp powdered gelatin
  • 1–2 tsp pink dragon fruit powder
  • ¼ cup blueberries
  • 3–4 strawberries, chopped
  • 1 kiwi, chopped
  • 1–2 tsp agave syrup, optional

Instructions:

  1. Gently warm the coconut milk over a low heat. Do not boil.
  2. Add the gelatin and stir until completely dissolved.
  3. Remove from the heat and allow the mixture to cool slightly.
  4. Stir in the vanilla protein powder, chia seeds, shredded coconut and optional ZinoBiotic or prebiotic fibre.
  5. Add agave syrup if using.
  6. Divide the mixture between 4 glasses or small bowls and refrigerate for around 45–60 minutes, until the white layer is firm enough to hold the second layer.
  7. To make the pink layer, gently warm half of the coconut water and stir in the gelatin until completely dissolved.
  8. Remove from the heat, add the remaining coconut water and stir in the pink dragon fruit powder.
  9. Allow the mixture to cool slightly, then gently add the chopped dragon fruit, blueberries, strawberries and kiwi. Add agave syrup if desired.
  10. Carefully spoon the pink fruit mixture over the chilled coconut layer.
  11. Refrigerate for another 1½–2 hours, or until completely set.
  12. Serve chilled and decorate with extra dragon fruit, kiwi, berries or a little shredded coconut.
