Chocolate Chickpea Ice Cream

This chocolate chickpea ice cream is a more nutrient-dense alternative to traditional ice cream, combining chickpeas and Greek yoghurt for protein and fibre. Banana provides natural sweetness and potassium, while unsweetened cocoa delivers rich chocolate flavour with minimal added sugar. Nut butter adds satisfying unsaturated fats, making this creamy dessert both indulgent and filling. Top with fresh berries or a few crushed nuts for extra fibre, antioxidants and texture.

Ingredients:

  • 1 tin chickpeas, drained and thoroughly rinsed
  • 2 ripe bananas, sliced and frozen
  • 150g thick Greek yoghurt
  • 2 tablespoons unsweetened cocoa powder
  • 1–2 tablespoons maple syrup or honey
  • 1 teaspoon vanilla extract
  • 1 tablespoon smooth peanut or almond butter
  • A small pinch of salt
  • 2–3 tablespoons milk, only if needed for blending
  • 20g dark chocolate, finely chopped, optional

Makes approximately four small servings.

Instructions:

  1. Drain and rinse the chickpeas extremely well. For the smoothest result, rub away the loose skins, although this is optional.
  2. Put the chickpeas, frozen banana, yoghurt, cocoa, maple syrup, vanilla, nut butter and salt into a strong blender.
  3. Blend until completely smooth, stopping to scrape down the sides. Add milk one tablespoon at a time only if the mixture is too thick to blend.
  4. Taste and add a little more cocoa or maple syrup if required.
  5. Fold in the chopped dark chocolate, if using.
  6. You can eat it immediately as soft-serve ice cream. For a firmer consistency, transfer it to a container and freeze for two to three hours.
  7. If frozen overnight, let it stand at room temperature for approximately 15 minutes before serving.
