Raspberry Greek Yoghurt Pots with Homemade Oat Biscuits and Zinzino ZinoBiotic+

A creamy, cheesecake-style dessert made with live Greek yoghurt, raspberries, homemade oat biscuits and added prebiotic fibre. It can be prepared in advance and left overnight for a softer, indulgent texture.

Ingredients:

Homemade oat biscuits

  • 120g rolled oats
  • 30g wholemeal flour
  • ½ teaspoon baking powder
  • ½ teaspoon ground cinnamon
  • A small pinch of salt
  • 1 egg
  • 25g butter, melted
  • 2 tablespoons honey or maple syrup
  • ½ teaspoon vanilla extract

Instructions:

Homemade oat biscuits

  1. Preheat the oven to 180°C, 160°C fan or Gas Mark 4.
  2. Line a baking tray with baking parchment.
  3. Place the oats, wholemeal flour, baking powder, cinnamon and salt in a mixing bowl.
  4. Add the egg, melted butter, honey or maple syrup and vanilla extract.
  5. Stir thoroughly until everything is evenly combined.
  6. Leave the mixture to stand for five minutes so the oats can absorb some of the moisture.
  7. Divide the mixture into 10 equal portions.
  8. Shape each portion into a small biscuit and place it on the prepared baking tray.
  9. Flatten each biscuit slightly using the back of a spoon.
  10. Bake for 12–15 minutes, until lightly golden around the edges.
  11. Leave the biscuits on the tray for five minutes before transferring them to a cooling rack. They will become firmer as they cool.

  • 300g live-culture Greek yoghurt
  • 100g fresh or frozen raspberries

  • 2 teaspoons honey or maple syrup
  • 1 teaspoon chia seeds
  • 1 teaspoon vanilla extract
  • Finely grated zest of ½ lemon
  • 2 homemade oat biscuits

Instructions:

  1. Place the Greek yoghurt in a mixing bowl.
  2. Add the 12g of Zinzino ZinoBiotic+ gradually, stirring thoroughly to prevent lumps.
  3. Add the chia seeds, vanilla extract, lemon zest and honey or maple syrup.
  4. Stir until the yoghurt mixture is smooth and evenly combined.
  5. Lightly crush two oat biscuits, leaving a few larger pieces for texture.
  6. Divide half the crushed biscuits between two glasses or serving jars.
  7. Spoon some of the yoghurt mixture into each glass.
  8. Add a layer of raspberries, gently crushing a few to release their juice.
  9. Add the remaining yoghurt and finish with the remaining biscuit pieces and raspberries.
  10. Cover and refrigerate for at least four hours, preferably overnight.

Leaving the pots overnight allows the biscuit to soften and produces a texture similar to a raspberry cheesecake.

Why it is good for you
