Whole Grain Pasta with White Bean & Spinach Sauce

Whole Grain Pasta with White Bean & Spinach Sauce – creamy, wholesome, and satisfying. This nourishing pasta dish blends protein-rich white beans, fresh spinach, garlic, and cottage cheese into a velvety green sauce. Tossed with whole grain pasta and topped with chili flakes or Parmesan, it’s a simple, delicious meal packed with fiber and flavor. Perfect for a hearty lunch or comforting dinner, with an optional lemon zest finish for a bright twist.

Ingredients:

(serves 2)

150 g whole grain pasta

1 can white beans, drained and rinsed

2 cups fresh spinach

1 cup cottage cheese or vegan cheese 

1/4 cup fresh parsley, chopped

1 clove garlic, minced

20 ml of water

Salt and pepper to taste

Optional: grated Parmesan cheese or vegan cheese.

Instructions:

  1. Cook the Pasta:  Cook the whole grain pasta according to the package instructions until al dente. Drain and set aside.
  2. Blend the Sauce:  Add the beans, spinach, garlic, parsley, water, salt, and pepper into a blender. Blend until smooth.
  3. Mix in Cottage Cheese or vegan cheese  Add the cottage cheese to the blender and blend until well combined and creamy.
  4. Combine Pasta and Sauce:  Add the cooked pasta to a skillet and toss to coat evenly with the sauce. Season with salt and pepper to taste.
  5. Serve:  Transfer to serving plates and garnish with grated Parmesan cheese or vegan cheese and chilli flakes if desired.

Tip: For extra flavour, add a squeeze of fresh lemon juice and a sprinkle of lemon zest before serving.
